Instructions:

  • Preheat Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Prepare the Egg Whites: In a large bowl, beat the egg whites and cream of tartar (if using) with an electric mixer until stiff peaks form.
  • Prepare the Yolks: In a separate bowl, mix the egg yolks, cream cheese (or Greek yogurt), and allulose (if using) until smooth.
  • Combine: Gently fold the yolk mixture into the beaten egg whites. Be careful not to deflate the egg whites too much.
  • Shape: Spoon the mixture onto the prepared baking sheet, forming round bread shapes (about 3-4 inches in diameter).
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the cloud bread is golden brown.
  • Cool: Allow the cloud bread to cool slightly before serving.
