Ingredients:
For the Sauce:
- 1/3 cup canned crushed tomatoes (no sugar added)
- 1 teaspoon olive oil
- 1 small clove garlic, minced

For the Keto Dough:
- 1 1/2 cups shredded whole-milk mozzarella
- 2 tablespoons full-fat sour cream
- 2/3 cup almond or coconut flour
- 2 large eggs, lightly beaten
- Kosher salt to taste
- Olive oil for greasing
For the Toppings:
- 1/3 cup shredded whole-milk mozzarella
- Crushed red pepper flakes, for sprinkling
- Dried oregano, for sprinkling
Instructions:
1. Prepare the Sauce:- In a small bowl, combine the crushed tomatoes, olive oil, minced garlic, and a pinch of kosher salt. Mix well and set aside.
- Preheat your oven to 375°F.
- In a microwave-safe bowl, combine 1 1/2 cups shredded mozzarella and 2 tablespoons sour cream. Microwave in 30-second intervals, stirring in between, until the cheese is fully melted and smooth.
- Add the almond or coconut flour, lightly beaten eggs, and a pinch of kosher salt to the melted cheese mixture. Stir until a dough forms.
- Grease a piece of parchment paper with olive oil and place the dough on it. Place another sheet of parchment paper on top and roll out the dough to your desired thickness.
- Transfer the rolled-out dough on the parchment paper to a baking sheet.
3. Pre-Bake the Dough:
- Bake the dough in the preheated oven for 8-10 minutes, or until it starts to turn golden brown.
4. Assemble the Pizza:
- Remove the pre-baked crust from the oven. Spread the prepared sauce evenly over the crust.
- Sprinkle 1/3 cup shredded mozzarella on top of the sauce.
5. Bake the Pizza:
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
6. Finish and Serve:
- Remove the pizza from the oven and sprinkle with crushed red pepper flakes and dried oregano to taste.
- Let the pizza cool for a few minutes before slicing and serving.
