Homemade Caesar Salad Dressing

  • 1 1/2 cups mayonnaise
  • 1 1/2 cups finely grated Parmesan cheese
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon anchovy paste
  • 4 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1 teaspoon lemon zest
  • 1/4 teaspoon freshly ground black pepper

  1. In a large mixing bowl, combine the mayonnaise, Dijon mustard, anchovy paste, Worcestershire sauce, minced garlic, lemon juice, lemon zest, finely grated Parmesan cheese, and black pepper.

  2. Whisk all the ingredients together until well combined and the dressing is smooth.

  3. Taste the dressing and adjust the seasoning as needed, adding more lemon juice, pepper, or Parmesan cheese according to your preference.

  4. If the dressing is too thick, you can adjust the consistency by adding a little water or more lemon juice.

  5. Transfer the dressing to an airtight container and store it in the refrigerator until ready to use.

  6. Give the dressing a good stir or shake before using it on your Caesar salad.
