Low-Carb Beef Quesadillas Recipe

These low-carb beef quesadillas are incredibly delicious and so easy to make! Tender, flavorful chuck roast beef, seasoned with garlic and curry paste, combined with melted cheese and fresh veggies, all tucked into a low-carb tortilla. This recipe is perfect for a quick weeknight dinner or a fun weekend meal. Enjoy the rich, savory flavors without the extra carbs!

Ingredients: 

  • 3 lbs chuck roast beef
  • 4-5 cloves garlic, minced
  • 2 tbsp curry paste
  • 18 oz bone broth
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup shredded mozzarella cheese
  • 8 low-carb tortillas
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: sour cream, avocado, salsa, and fresh cilantro for serving

Instructions: 

1. Prepare the Beef:

  • Preheat your oven to 300°F.
  • Season the chuck roast with salt and pepper.
  • In a large oven-safe pot or Dutch oven, heat 1 tbsp of olive oil over medium-high heat.
  • Add the chuck roast and sear on all sides until browned. Remove and set aside.

2. Cook the Beef:

  • In the same pot, add the minced garlic and sauté until fragrant.
  • Add the curry paste, ground cumin, and smoked paprika, and cook for another 1-2 minutes.
  • Pour in the bone broth, scraping up any browned bits from the bottom of the pot.
  • Return the chuck roast to the pot, cover with a lid, and transfer to the preheated oven.
  • Cook for 3-4 hours, or until the beef is tender and easily shredded with a fork.

3. Shred the Beef:

 

  • Remove the pot from the oven and transfer the chuck roast to a large bowl.
  • Shred the beef using two forks, discarding any excess fat. Set aside.

4. Prepare the Quesadilla Filling:

  • In a large skillet, heat a little olive oil over medium heat.
  • Add the chopped onion and bell pepper, and sauté until softened.
  • Add the shredded beef to the skillet and mix well. Cook until heated through.

5. Assemble the Quesadillas:

  • Preheat a non-stick skillet or griddle over medium heat.
  • Place one low-carb tortilla on the skillet and sprinkle with a mix of cheddar and mozzarella cheese.
  • Add a generous amount of the beef mixture on top of the cheese.
  • Sprinkle more cheese over the beef and top with another tortilla.
  • Cook until the bottom tortilla is golden brown and crispy, then carefully flip and cook the other side until golden brown and the cheese is melted.

6. Serve:

 

  • Remove the quesadilla from the skillet and cut into wedges.
  • Serve with sour cream, avocado, salsa, and fresh cilantro if desired.
