Keto Zucchini Boats

Zucchini boats are a delicious and low-carb option for a satisfying meal. These boats are stuffed with a flavorful mixture of ground beef, marinara sauce, and cheese, making them a perfect choice for those on a keto diet. They are easy to customize with your favorite fillings, and they bake up perfectly tender with a cheesy, golden top. This dish is great for meal prep or a family dinner and pairs well with a fresh salad or roasted vegetables.

 

Ingredients:

  • 4 medium zucchini
  • 1 lb lean ground beef (or ground turkey)
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the center, leaving a 1/4-inch thick shell. Reserve the scooped-out flesh.
  3. Place the zucchini boats on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 10 minutes.
  4. Meanwhile, in a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  5. Add the ground beef to the skillet and cook until browned. Stir in the Italian seasoning, salt, pepper, and the reserved zucchini flesh.
  6. Pour in the marinara sauce and let the mixture simmer for 5 minutes.
  7. Remove the zucchini boats from the oven and fill each with the beef mixture.
  8. Top with shredded mozzarella and Parmesan cheese.
  9. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh basil or parsley if desired, and serve hot.
