High-Protein Egg Bake Squares (Perfect for Breakfast Sandwiches)
This high-protein egg bake is light, fluffy, and easy to make. Blending egg whites, whole egg, and fat-free cottage cheese creates a smooth texture that bakes up tender and satisfying — perfect for breakfast, meal prep, or adding to a sandwich.
It’s simple, macro-friendly, and customizable with your favorite seasonings or mix-ins. For this recipe, I usually cut the bake in half to fit the sandwich.
Ingredients

1 large egg

180 g egg whites

80 g fat-free cottage cheese, blended smooth

Salt & pepper, to taste

Instructions

Preheat oven or toaster oven to 375°F (190°C).

Add the egg, egg whites, and blended cottage cheese to a bowl.
