There is nothing more nostalgic than a soft, squishy marshmallow — but traditional marshmallows are basically pure sugar. If you’re trying to keep sugar low or stay on track with your health goals, they’re not exactly the best option… until now.
These homemade sugar-free marshmallows are made with powdered monk fruit sweetener with erythritol, which gives you that classic sweetness without the sugar crash. They whip up beautifully, set perfectly, and melt just like regular marshmallows in a warm mug of cocoa. Total win.
And because we’re using gelatin from a jar instead of packets, this recipe is super flexible. You can make them as soft or as firm as you like — great for snacking, cutting into shapes, or using in recipes.

📝 Ingredients

¾ cup cold water, divided

½ cup for blooming gelatin

¼ cup for syrup

3 tablespoons unflavored gelatin (from a jar)

1 cup powdered monk fruit sweetener with erythritol

¼ teaspoon salt

1 teaspoon vanilla extract

Optional: extra powdered monk fruit for dusting
👩🍳 How to Make Sugar-Free Marshmallows
1. Bloom the Gelatin
Pour ½ cup cold water into the bowl of a stand mixer.
Sprinkle 3 tablespoons gelatin evenly on top and let it sit for 10 minutes until fully bloomed.
2. Make the Sweetener Syrup
In a small saucepan, add ¼ cup water, powdered monk fruit sweetener, and salt.
Heat over medium, stirring until the sweetener is dissolved and the mixture is hot — around 160–170°F.
Do not boil.
3. Whip Until Fluffy
Turn your mixer to low and slowly pour the hot syrup into the bloomed gelatin.
Increase to high speed and whip for 10–12 minutes until the mixture is thick, glossy, and fluffy like marshmallow cream.
4. Add Vanilla
Mix in the vanilla for 10 seconds.
5. Pour & Set
Transfer the marshmallow mixture into a parchment-lined dish lightly dusted with powdered sweetener.
Smooth the top.
Let sit at room temperature for 2–4 hours until fully set.
I ended up putting mine into a ziploc bag this time around to make bites instead of cutting them into squares.
6. Slice & Enjoy
Dust the top with a little more powdered sweetener.
Use an oiled knife to cut into squares.
Store in an airtight container at room temp for up to 3 days.
💡 Tips for Perfect Sugar-Free Marshmallows

Powdered sweetener works best — granulated will be gritty.

Don’t refrigerate. Sugar alcohols “sweat” in the fridge.

For softer marshmallows: use 2½ tablespoons gelatin.

For firmer marshmallows: use 3½ tablespoons gelatin.
