My Go-To Weeknight Pot Roast (Easy Slow Cooker Recipe)

This is the dinner I make when I want something comforting, filling, and basically impossible to mess up. It’s one of those meals that feels like you spent all day in the kitchen… but really, the slow cooker did all the work.



No packets. No complicated steps. Just real ingredients, big flavor, and fall-apart tender beef every single time.


The secret ingredient? Banana pepper juice. It adds just enough tang to balance the richness without making the dish spicy. Trust me — it works.

This is the kind of meal you throw together in the morning and come home to feeling like dinner is handled.

Ingredients:

  • 3.5 lb beef chuck roast
  • 2 tbsp butter (for browning)
  • 25 g Kinder’s The Blend seasoning
  • 2 tsp cornstarch
  • 2 cups beef broth
  • Juice only from 1 jar mild banana pepper rings
  • 4 potatoes, scrubbed and chopped (skins on)
  • 4 large carrots, peeled and sliced
  • 1 medium onion, diced

Instructions;

  1. Brown the roast
    Heat butter in a large skillet over medium-high heat. Add the chuck roast and sear on all sides until deeply browned.
  2. Layer the slow cooker
    Add diced onion, potatoes (skins on), and carrots to the bottom of the slow cooker.
  3. Add the beef
    Place the browned roast on top of the vegetables.
  4. Mix the liquid
    In a bowl or large measuring cup, whisk together beef broth, banana pepper juice, Kinder’s The Blend seasoning, and cornstarch until fully combined.
  5. Pour & cook
    Pour the mixture over the roast and vegetables.
  6. Low & slow
    Cover and cook on LOW for 10 hours, until the beef is fall-apart tender.
  7. Serve
    Shred the beef slightly, stir everything together, and serve warm with plenty of the savory broth.

Tips & Notes:

  • Diced onion melts into the broth and adds flavor without big chunks.
  • Leaving potato skins on saves time and adds texture.
  • Seasoning the liquid instead of the beef gives even flavor throughout.
  • Banana pepper juice only adds brightness without heat.
  • For thicker gravy, mash a few potato chunks into the broth before serving.
